Chess Pie Bars

I made these for my uncle Bobby yesterday. I guess everyone likes them b/c there is only two left lol. Very easy and really good.

For the crust:

2C all purpose flour
1/4C Sugar
1/2tsp Salt
3/4C cold butter, cut up

For the filling:
3 eggs
1 1/2 C Sugar
6 tbsp butter -melted
1 tbsp cornmeal
1tsp vanilla
1 tsp white vinegar

Preheat oven to 350 degrees F. Grease a 13x9 baking dish w/cooking spray. In a large bowl, combine the crust ingredients. Beat the flour, sugar, butter and salt on low speed til crumbly. You can use a good processor as well. Press mixture in bottom of pan about 1/2in up sides of the greased pan.

Bake the crust at 350 for 20 min or til very light brown.

Meanwhile,in a large bowl, beat the eggs and add sugar. Stir in the melted butter, cornmeal, vanilla and vinegar. Mix well. Pour filling over hot crust. Return to oven and continue baking 20-25min or until the filling is set. Filling may puff up during baking but will settle as it cools.

Cool the bars in the baking pan for 1 hr then cut into bars. store in well covered dish in the fridge.
