Lemon Bars




Base: 2 C all pupose Flour
         1/2 C powdered sugar
         1C butter(soft)

Filling: 4 eggs
           2C sugar
           1/4C flour
           1tsp baking powder
           1/4 C lemon juice

Glaze: 1 C powdered Sugar
          2-3 tbsp lemon juice

*Heat oven to 350 degrees. Lightly spoonflour into measuring cups; level off. In a large bowl, combine all base ingredients, beat at low speed till crumbly. Press mixture evenly into bottom of 9x13 pan. Bake at 350 for 20 minutes or until light golden brown.

*In a large bowl, combine filling ingredients except lemon juice; blend well. Stir in 1/4C juice,remove pan from oven and pour filling over top. Return to oven and bake at 350 for an additonal 25-30 minutes or till the top is light brown. Cool 1 hour or until completely cool.

*Mix glaze ingredients and glaze cooled bars. Cut into bars.

Rocky Road Fudge



This is a very simple and yummy fudge recipe. I have had this one for years now and it comes from a friend that we call "Ole Woman", she's not old at all and I adore her.

1 (12oz) package semi-sweet chocolate chips
1C creamy peanut butter
3C mini marshmallows
1/2 C chopped nuts

Microwave chocolate chips and peanut butter in bowl on high for 2-3(takes me 2 1/2 minutes) till melted. Stir well until peanut butter is incorporated into the chocolate. Fold in marshmallows and nuts. Spoon into a greased 9" square pan and chill till firm and cut into small squares.

Crock Pot Candy



32 oz jar lightly salted peanuts
1 (12 oz) pack of semi-sweet chocolate chips
1 (4oz) bar of german chocolate
16oz white almond bark
16oz chocolate almond bark

Put peanuts in bottom of crack pot. Put in chocolates and almond bark on top of the peanuts. I used unsalted peanuts bc we don't need anymore sodium lol. Cook on low for about 2 hrs or until ur chocolate is all melted. Stir well then drop by spoonfuls on wax paper. They will set up on their own. If you want them to set up faster, put them in fridge. I used a little cookie scoop to drop these but you can just use a spoon. They are very tasty and I think ANY nut would do for this recipe. Enjoy!
