This recipe is so quick to put together. It's very yummy and goes great w/stews or soups.
2 1/4 C all purpose flour
3tbsp sugar
1tbsp baking powder
1/2tsp baking soda
1/2 tsp salt
12 oz beer(whatever you like and have is fine)
2tbsp olive oil
In a large bowl, combine flour,sugar,baking powder, baking soda and salt. Make a well in the center, pour in beer and olive oil and mix until well blended. Pour into greased laof pan and bake at 400F for 45min or until golden brown.

Monster Bread
This is what we call "monster bread" in our house. It's a great way to get Aiden to eat spinach. Yes, I know, I am tricky hehe.
Italian Bread-or whatever you like
Spinach, if frozen defrost and drain water
minced garlic
butter(or olive oil, whatever you like)
salt and pepper
In a blender or food processor, add spinach,garlic,butter,salt and pepper(I don't measure, just eyeball it. It needs to spread easily on bread). Process til ingredients are mixed together well and can spread onto bread.
Bake in oven til butter is melted and bread is light brown.
